Smell, actually. Never really thought of it before. What is that supposed to mean? Oh, I don't bake though...

I have a brand new stove that cooks everything just right according to the timer, so I use the timer.

if you cook by smell, you will overcook your food ... set the timer on the short end of the scale and then depending on what is being cooked (roast, cake, pie, pizza) determine by periodic checking when it is finished

Both, usually the smells let me know how it's doing, but I always set the timer for things that need checking and I keep a record of what the time really was best so next time I will be able to replicate it if it came out good.
