How do you crack your raw egg? On the side of a table, with a fork, on the side of the bowl, etc.?

Usually with a fork so I don't get any shells in my cracked eggs.

The online instructions say you should crack them on a flat surface to lessen shell fragments. In the service they just let the fragments settle on the bottom of the pan and don't use the dregs. The one piece of information I did find helpful is using the shell to remove the fragments. While they run away from probing fingers they seem attracted to their mother shell!
